Summer is in full swing, and we hope you're enjoying the sunshine, longer days, and all the fun this season brings. As we head into the heart of summer, we’ve got exciting updates, events, and important reminders to keep you informed and connected. Whether you're planning a getaway or staying local, there's something for everyone these months.
Community Updates
Thank you to everyone who came to our Memorial Day and 4th of July cookouts!
We had an amazing time and truly appreciated everyone who joined us.
Back in April, we celebrated Easter with a special visit from the Easter Bunny! The kids had a great time hunting for eggs and enjoying the festive fun.
Funny story: We hid four golden eggs. Ana, our Resident Council member, was in charge of hiding them. The kids quickly found two of them and kept searching for the other two—but Ana couldn’t remember where she hid them! She ended up joining the kids in the hunt, searching for the missing eggs right alongside them. (Don’t worry—they were found!) It was a fun and memorable day for everyone.

Backpack Drive Returns!
Thanks to the success of last year’s Donna DeLauri Backpack Drive, her family and foundation have decided to fund it again this year! We’re incredibly grateful for their generosity to the Quaker Meadows community.
Backpacks will be filled with school supplies for Quaker Meadows residents attending school this fall. Flyers will be distributed soon to sign up.
Distribution will take place during the Labor Day Cookout on Thursday, August 28.
We can’t wait to see the smiles on all the kids' faces!

By now, most of you have received a message via email or text from Jenny, our AI assistant. Feel free to use Jenny to ask questions, submit work orders, and more. However, you’re always welcome to call or email the office directly for assistance.
Just a quick reminder: please contact the office if you’ve recently changed your email address or phone number. As you know, we are transitioning away from paper notifications and relying more on digital communication. Keeping your contact information up to date will help us keep you informed quickly and easily.
Looking ahead, we are planning to seal coat and line stripe the parking lots this summer. We will notify you in advance when the project is scheduled. Please note: all vehicles will need to be removed from the lots for 24 to 48 hours. While we will provide more details soon, it’s a good idea to start thinking about alternative parking options during this time.
Seasonal Tips
To stay healthy and safe during the summer, remember to prioritize staying cool, hydrated, and protected from the sun. This includes spending time in air-conditioned spaces when possible, drinking plenty of fluids, and using sunscreen—especially when spending time outdoors.
Maintenance Notes 🔧
As a reminder, window air conditioners are not permitted at Quaker Meadows. If you have an air conditioner in your A/C sleeve, please check your air conditioner filter to make sure it is clean before running your A/C. A clean filter will help your air conditioner run more efficiently for longer, as dirt and grime will cause it to overwork and use more energy than necessary. Keeping your air conditioner filters clean helps the cooling process, allowing you to chill the room faster and turn the air conditioner off earlier.
Do you need your porch door storm glass changed to the screen? If so, please call the office to put in a work order. We want you to be able to enjoy the cool air this spring.

Creamy Risotto with Squash, Asparagus, Spinach, and Mushrooms
A cozy, creamy dish packed with seasonal vegetables—perfect for a hearty meal any time of year.
Ingredients
2 tbsp olive oil
1 tbsp avocado oil
1 large shallot, chopped
3 cloves garlic, minced
8 oz baby bella mushrooms, sliced
1 cup asparagus, cut into 1–2" pieces
1 cup diced butternut squash (or substitute with squash purée)
1 cup Arborio rice
5 cups vegetable broth (warmed)
1/4 cup white wine (optional)
1 tsp dried thyme
2 cups baby spinach
1 tbsp butter (optional)
1/2 cup grated Parmesan cheese (or nutritional yeast for a vegan version)
Salt and pepper to taste
Pinch of red pepper flakes (optional)
Instructions
Start by preparing your vegetables: dice the squash, slice the mushrooms, mince the garlic, chop the shallot, and cut the asparagus into 1–2 inch pieces.
In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped shallot and sauté for about 2 minutes until softened. Add the garlic and cook for another minute.
Next, stir in the mushrooms and diced squash. Cook over medium-low heat for about 8 minutes, or until the squash starts to soften.
Add the Arborio rice and stir frequently for about 3 minutes, until the edges of the rice begin to look translucent and slightly toasted.
If using, pour in the white wine and stir until it has been completely absorbed by the rice.
Begin adding the warm vegetable broth, about 1/2 cup at a time. Stir frequently, allowing each addition of broth to be absorbed before adding more. This slow process is key to creating a creamy texture.
When you’re down to the last cup of broth, stir in the asparagus. Continue cooking and stirring as the final bit of broth is absorbed.
Once the risotto is creamy and the rice is cooked al dente, stir in the baby spinach, butter (if using), and Parmesan cheese (or nutritional yeast). Stir until the spinach is wilted and everything is well combined.
Season to taste with salt, pepper, and red pepper flakes if desired. Serve immediately while hot and creamy.
Tips for Perfect Risotto
Warm your broth: Cold broth will interrupt the cooking process—warm broth helps maintain the creamy texture.
Stir often: Stirring encourages the rice to release its natural starches.
Be patient: Don't rush adding the broth—let the rice absorb it slowly for the best result.
Taste as you go: Adjust seasoning based on your taste and desired consistency.
